The Welsh Rarebit Vest is a hearty beast that supports you as an outer wear item, or a super functional pocketed mid layer.
This item has been tested for several years sailing abroad classic yachts, or meeting rooms across the globe. The fabric is tightly woven Organic Cotton; specifically Eta Proof from Switzerland, which is the environmental development of the well known Ventile Cloth that supported many a sailor, soldier and airman in WW2.

Eta Proof
In contact with water, cotton fibres swell approx. 10%. This volume increase closes all pores which results in a waterproofness, which withstands rainfalls and storms. The measured pore size is 2-3 µm, small enough to prevent penetrating water and big enough to let pass body humidity.

Densely woven cotton fabrics with high performance were originally produced in England. In the 1930's they were used as fire hoses and water buckets. During the Second World War the fabric protected the lives of the British Hurricane pilots who frequently had to bail out of their aircraft by parachute or ditch their planes in the icy waters of the Atlantic. The Immersion Suits made of this performance cotton fabric proved to be comfortable to wear, both in the cockpit and during the endless hours of waiting to be summoned for take-off. The water tight and thermally insulating fabric gave the pilots a genuine chance of survival in emergency situations. After the war these fabrics continued to be used for the airforce, the navy and more and more every day performance jackets and coats.
INGREDIENTS
225g grated, strong cheese such as Cheddar or Cheshire
1 tablespoon butter
2 teaspoons Worcestershire sauce
1 level teaspoon dry mustard
2 teaspoons flour
Shake of pepper
4 tablespoons beer, Guiness or milk (Guiness gives a stronger flavour)
4 slices bread toasted on 1 side only
METHOD
Put the cheese, butter, Worcestershire sauce, mustard, flour and pepper into a saucepan.
Mix well and then add the beer, Guiness or milk to moisten. Do not make it too wet!!
Stir over a gentle heat until all is melted, and when it is a thickish paste, stop stirring, and swivel it around the saucepan, which it will do quite easily.
Leave to cool a little, and meanwhile toast the bread on one side only.
Spread the rarebit over the untoasted side and brown under a hot grill.
This mixture can be made and kept in the refrigerator for several days if required.
